Joy, thank you kindly for the feature of my recipe for Corn Moussaka! Have a wonderful week ahead, thanks for hosting.
The mousaka sounds yummy. I keep meaning to tell you that the polenta is quite a bit courser than cornmeal and if you decide to make cornbread, I would encourage you to put it through a processor to get it to a finer grit. I made cornbread with it as is and it wasn’t quite what it should be. Polenta can be used interchangeably with grits if you are interested in trying something else with it. There are so many options with grits. I had cheesy grits when I was in the hospital and it was really good.
mmmmm- peanut butter cookies – my favourite!! Especially if they have chocolate chips added.
