Lemon Shortbread Stars
Delicious Lemon Shortbread Stars with a Lemon Glaze!
- 2 cups Plain Flour
- 2 tbsp Rice Flour
- 200 g Unsalted ButterĀ
- 1/3 cup Icing Sugar
- 1 tsp Finely Grated Lemon Rind
- 2 tbsp Lemon Juice
Lemon Glaze
- 1 cup Icing Sugar
- 2 tbsp Lemon Juice
- Yellow Food Coloring
- Silver Cachous
- toothpick
Preheat oven to 180C
Mix flour, butter and sugar in food processor until mixture is crumbly
Add lemon rind and juice. Mix until it forms a dough.
Turn out dough onto a lightly floured surface and knead until smooth.
Roll out dough and cut out star with cookie cutter
Bake for 10 min or until very light brown
Cool on wire rack
Lemon Glaze
Combine Icing sugar and lemon. Stir till smooth.
Dip biscuits face down in glaze.
Dip toothpick in yellow food coloring, and draw lines into icing from the center of the star out, before it sets.
Place a silver cachou in the middle!
