I thought I’d share a family favorite recipe today, for a change… because a change is as good as a holiday, they say, and I have no time for a holiday right now!
I’ve even got a printable recipe for you to download at the end…. just in case you want to try it out…


Bacon and Cheese Muffins
Ingredients
- 2 cups Self Raising Flour
- 3/4 tsp chicken stock powder
- 1/4 tsp garlic salt
- 1/2 tsp paprika
- 80 g butter
- 2 cups grated cheese
- 1/2 cup fried bacon pieces
- 1 cup milk
- 1 egg, beaten
Instructions
- Combine dry ingredients in mixing bowl.
- Add butter and rub it in until thoroughly mixed.
- Add grated cheese and fried bacon pieces. Stir.
- Add milk and egg. Stir until all the batter comes together.
- Spoon into muffin tins.
- Sprinkle with extra paprika
- Bake for 25 min at 200C or until golden brown
Notes
• use ham instead of bacon
• use sundried tomatoes and feta cheese instead of bacon, and use less grated cheese
