Quick and Easy Melt & Mix Shortbread ~ A Classic!

I was going to post my last watercolor attempts… but the duck is still scaring me…….. and she is up next, so I am procrastinating….
So I decided another recipe was in order…. this time something sweet – but not too sweet…
It’s also super quick and easy to make…. I like to mix up batches of the dry ingredients on one day, then pop them in the pantry. That way, on baking day I can just pull out a zippy bag and add it to the melted butter and vanilla… !

Here it is ready to serve… I left it in a little longer than I should have but it was still yummy… and my apologies for the photo – it seems like the only time I have at the moment for blogging is in the evenings. I will take another photo in daylight one day!


Melt & Mix Shortbread
Ingredients
- 250 g butter
- 1/3 cup icing sugar
- 1/3 cup cornflour
- 1/4 cup caster sugar
- 1 tbsp rice flour
- 1/2 tsp vanilla essence
- 2 ½ cups plain flour
Instructions
- Preheat oven to 180C
- Melt butter in medium size saucepan on stove.
- Take the pan off the stove and add remaining ingredients. Mix well.
- Press into square or rectangle cake tin
- Prick with a fork and sprinkle some caster sugar over the top.
- Bake for 30 min or till it starts going light brown at the edges.
- Cut into squares while still warm and allow to cool in tin before removing and storing in an airtight container.
